Cynara scolymus

Family:  Asteraceae
Perennial.  Native to Southern Europe.  Artichoke is a pleasant tasting vegetable, bears a bitter leaf which makes an excellent digestive tea and contains a compound called cynarin which is hepato-protective.  Has been used extensively to treat indigestion, liver disease, arteriosclerosis, gallstones and obesity.   Cultivation:  Easy.  In spring, plant seeds directly in the garden or in gallon pots.  Thin or transplant to 2 feet apart.  Grows best in cool climates and coastal areas.  Prefers rich, composty soil.
