Burdock, Gobo

Arctium lappa

Family:  Asteraceae
Classic biennial.  Native to temperate Europe and Asia.  Harvest this highly nutritive, blood cleansing and alterative root during the first growing season or at latest in the dormant period after first season of growth.  Use of Burdock root either boiled or raw, together with Echinacea tincture and fresh Dandelion, has quickly cured the most intractible infections of impetigo or staph.  To cook, wash the roots, chop them in pieces, steam until tender and eat with butter. To eat raw, wash roots and grate onto salad.  Cultivation:  Easy.  Direct seed in spring.  Plant closely as you would carrots for optimum yield and ease of harvest.  Flowers to 7 feet tall in the second year.
