Coriander (Cilantro)

Annual.  Native to the Mediterranean shores.  Harvest the shining, smooth leaves before the plant flowers for use as Cilantro in cooking and in salsa.  To obtain seed for use as the curry spice Coriander,  allow the plant to mature and rub out the seed.  The seed may be soaked in water overnight, and the water drunk to alleviate flatulence.  The herb and seed are stimulant, aromatic and carminative.  Cultivation:  Easy.  Direct seed in early spring.  The plant will bolt very quickly if kept in pots.  Plant 6 inches apart.  Grows  from 1 to 3 feet in height.
